Ingredients:
• 1 lb thinly sliced ribeye steak (or sirloin)
• 1 green bell pepper, thinly sliced
• 1 medium yellow onion, thinly sliced
• 1 cup mushrooms, sliced (optional)
• 1 tablespoon olive oil
• 1 tablespoon butter
• Salt and black pepper, to taste
• 4 hoagie rolls or sub buns
• 8 slices provolone cheese (or American or Cheez Whiz, depending on your style)

Directions:

  • Sauté the veggies:
    In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell pepper, and mushrooms (if using). Cook for 6–8 minutes, stirring occasionally, until softened and slightly caramelized. Remove from skillet and set aside.
  • Cook the steak:
    In the same skillet, melt the butter. Add the thinly sliced steak and season with salt and pepper. Cook for about 4–5 minutes, stirring frequently, until the steak is fully cooked and slightly browned. Return the sautéed vegetables to the skillet and mix everything together.
  • Melt the cheese:
    Lay slices of provolone cheese over the meat and veggies in the pan. Cover with a lid for 1–2 minutes until the cheese melts. Stir gently to incorporate.
  • Assemble the sandwiches:
    Split the hoagie rolls and toast lightly if desired. Spoon the hot cheesesteak filling into each roll. Serve immediately while warm and melty!
