Ingredients:

  • 5 pounds beef prime rib (bone-in recommended)
  • Sea salt, to taste
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 8 cloves garlic, minced
  • 1/4 cup olive oil
  • Optional: prepared horseradish, for serving

Directions:

  • Bring to Room Temperature:
    Remove the prime rib from the fridge 1 hour before cooking. Generously season all sides with sea salt. Cover loosely with plastic wrap and allow to come to room temperature. This ensures even cooking.
  • Preheat Oven & Adjust Rack:
    Set your oven rack so the roast will sit in the center of the oven. Preheat to500°F (260°C).
  • Prepare the Seasoning Paste:
    In a small bowl, mix together the olive oil, garlic, black pepper, rosemary, thyme, and about1½ teaspoons salt.
  • Prep the Roast:
    Pat the roast dry with paper towels. Rub the seasoning paste all over the roast.
    • For bone-in roast: Place bone side down in a cast iron pan or roasting pan.
    • For boneless roast: Set it on a rack inside your roasting pan.
  • Initial Sear:
    Roast at500°Ffor15 minutesto sear the outside and lock in the juices.
  • Lower Heat & Roast to Doneness:
    Reduce oven temperature to325°F (163°C)and continue roasting.
    Use a meat thermometer to monitor internal temperature:
    • Rare: 120°F (about 10–12 minutes per pound)
    • Medium Rare: 130°F (13–14 minutes per pound)
    • Medium: 140°F (14–15 minutes per pound)
    • Medium Well: 150°F
  • Tip:Remove the roast from the oven5–10°F before your desired doneness, as it will continue to cook while resting.
  • Rest the Roast:
    Tent the roast loosely with foil and let it rest for30 minutes. This allows juices to redistribute for maximum tenderness.
  • Carve and Serve:
    Slice against the grain into ½-inch thick slices. Serve with horseradish or your favorite side dishes like roasted potatoes, green beans, or Yorkshire pudding.
